Miso Maple Acorn Squash
Cook and Prep Time: 45 minutes
Serves: 3-4
You Need
- 2 Acorn Squash, halved, deseeded, and chopped
- 2 tbsp. Red Miso Paste
- 1 tbsp. Maple Syrup
- 1 tsp. EVOO
- Freshly Ground Black Pepper, for garnish
- Sesame Seeds, for garnish
DIRECTIONS
- Rinse and chop the squash. Line 1 baking tray and preheat your oven to 400˚F.
- Lightly brush each side of the squash with oil.
- Once the oven is hot bake the squash for 30 minutes, flipping halfway.
- Mix the miso paste and maple syrup together. Add water if needed for a thinner texture.
- Remove the squash from the oven. Brush the miso-maple glaze on each side. Bake for 10 minutes more.
- Garnish with desired toppings. Enjoy!
